Rice Salad

 


6 shrimp
6 scallops
1/4 c olive oil
salt and pepper to taste
2 c cooked rice your favorite kind can use left over from night before
2 c mixed salad greens
1/2 cup crab meat
1/4 cup white wine
1/4 diced shallots
1/2 cup sliced mushrooms
5 fresh asparagus spears  cut in 3rds
cucumber
cherry tomato
 
1.Heat olive oil in skillet salt and pepper
2.In a large salad bowl add the salad mix and the cooked chilled rice
3.Allow shrimp and scallops to saute for about 1 minute each side
4.Deglace the pan with the white wine
5.Add the shallots to skillet
6.Slice cucumber and the cherry tomatoes
7.Add seafood mix on the salad mix add remaining ingredients to salad mix
8.Top with favorite salad dressing
 
serves 4, cook time 15 minutes excluding rice cook time
