Caribbean Pork

 


4 boneless pork chops
1/4 c olive oil
1/2 c sliced red onion
1 ear of corn sliced 1/2 in thick
1/4 c diced red bell pepper
1/4 c diced green bell pepper
1/2 c diced peeled pineapple
1/4 c teriyaki sauce  ** Recipe Below
1 t minced garlic
black pepper
 
1. Season pork chops with black pepper
2. Heat oil in pan
3. Add pork chops, onion, corn, pineapple and green and red peppers
4. Saute until pork is done and vegetables are tender 
5. Add teriyaki sauce, allow to coat meat and vegetables well garnish with pineapple leaves
serves 2, cook time 20 min

Teriyaki Sauce
 
1 c soy sauce
1/2 c brown sugar
1/4 c pineapple juice
1/4 c orange juice
 
place all ingredients in a small sauce pan
cook until sugar is melted
can be prepared in advance
yield 2 cups
***makes a good marinade for fish and other items***
