Passover Begins with Seder Observance

One more important mark on the calendar, last night was the first night of Passover. Jewish families usher in the commemoration with a festive meal, the Seder, marking the Jewish exodus from Egypt and escape from slavery.

"This is new life, a new freedom," said Rabbi Arnold Belzer. "And this is spring, a new season. And we present the new life of the spring season."

The Seder is very symbolic. Matzoh--unleavened bread--reminds celebrants of Israelites who fled Egypt without even the time to let their bread rise into loaves. And parsley and salt symbolize a poor man's vegetable and tears.
