Tips for eating healthy during National Nutrition Month
SAVANNAH, Ga. (WTOC) - March is National Nutrition Month, which stresses the importance of a balanced diet and exercise.
South Coast Health dietician, Rebekah Laurance, joined Morning Break to show us how we can have the right foods in our diet and tips for how to stay healthy.
Recipe for Gazpacho
2 pounds of Tomatoes, seeds removed
½ red onion, roughly chopped
1 cucumber, peeled and seeded, roughly chopped
1 bell pepper, seeded, roughly chopped
2-3 cloves of garlic, chopped
2 Tbsp Wine Vinegar
3 Tbsp Olive Oil
Salt and Pepper to taste
Place all items in a blender. Blend for 1 minute or until desired consistency. Chill in the refrigerator for 3-4 hours before serving. Serve in a bowl with additional toppings as desired.
Optional toppings of choice: cheese, avocado, croutons, lump crab, grilled shrimp, herbs, pumpkin seeds
