How to make sweet potato cupcakes

SAVANNAH, Ga. (WTOC) - Dessert stylist and business owner, Ebony Clark, joined Morning Break to show us how to turn a popular southern vegetable into a sweet treat.

Sweet Potato pie cupcakes:

1 cup granulated sugar

* 1 cup light brown sugar

1 cup vegetable oil

1 cup puréed sweet potato

* 3 large eggs

1 TBSP vanilla

* 1 1/2 TSP Cinnamon

* 1/4 TSP Nutmeg

* 1 TSP baking powder

1 TSP baking soda

* 2 cups all purpose flour

Easy Sweetcream Buttercream

*2 stick of unsalted butter

*6 cups of powdered sugar

*1 teaspoon of vanilla

*3 -4 tablespoons of sweet cream coffee creamer
