Making a vegan option for National BBQ Month

SAVANNAH, Ga. (WTOC) - It’s National BBQ Month!

But not all of us go crazy for beef, pork, and chicken. Here to give us a recipe that allows us to celebrate this month vegan style is Chef Alexander Mack!

How to Mack Vegan BBQ Sauce

Kitchenware items needed:

You will need a pot (with lid.), rubber spatula, blender, measuring cups, mason jars, knife, cutting board, mixing bowl, and spoon.

Ingredients:

1 Onion, 1 carrot, 6 garlic cloves, 10 roma tomatoes, 8 ounce can of tomato paste, ¼ cup apple cider vinegar, ¼ cup distilled vinegar, 1 Tbsp. of smoked paprika, 1 Cup Coconut Sugar, ½ Cup of Maple Syrup, 2 tsp. Ground mustard, 1 tbsp. Black Pepper, Salt to taste, ¼ cup vegan butter, 3 tsp. Liquid Smoke, Water, and ⅛ cup Olive Oil.

Instructions:

  • Dice onion, carrot, and peel garlic. Set aside.
  • Cut Roma tomatoes in half and gut the seeds out with a spoon (Save center for planting, compost, or for another recipe.).
  • Add vegetables to pot, add water to cover, and cover pot with lid. Turn temperature on high to boil for 10 mins or until there’s a quarter of water left (Test the carrots with a fork by poking it to be sure they’re soft. If not add a little more water and repeat boiling process.).
  • Add all dry ingredients and tomato paste, mix well, and turn temperature down to medium low.
  • When there’s no water turn heat off and transfer ingredients from pot to a bowl.
  • Add ingredients from the bowl to the blender with vegan butter, distilled vinegar, apple cider vinegar, and olive oil.
  • Blend ingredients until smooth.
  • Add maple syrup.
  • Blend for 30 secs.
  • If the Mack Vegan BBQ is slightly chunky add a little water while blending to smooth out.
  • Place in mason jar(s) and leave on counter to completely cool.
  • Place lid on and secure tight to be stored in refrigerator.

Mack Ribs

Kitchenware items needed:

You will need 2 Cast Iron Skillets (1 large/1 medium or small), tongs, bowl, strainer, knife, and a cutting board.

Ingredients:

2 large Portobello mushrooms, salt, pepper, olive oil, and Mack Vegan bbq sauce.

Instructions:

  • Preheat oven to 400 degrees Fahrenheit to bake.
  • Grab strainer and wash mushrooms of any dirt.
  • Cut mushroom thick/wide (Rib size.).
  • Coat the large cast iron skillet with oil (To cover.). evenly. Season cast iron with salt and pepper.
  • Turn heat on medium high. Allow pan to cook until you see a little smoke.
  • Add each mushroom slices lightly apart from each other in the middle of the large cast iron on its side immediately
  • Press mushrooms lightly with medium size cast-iron pan (Heavy pot if you don’t have a cast iron.). Apply a little pressure and let it cook for 1 min. Lift top pan, wipe off liquid with towel, flip mushrooms, and repeat process once.
  • Lift medium cast-iron skillet off mushrooms after 1 min. and set aside.
  • Cut heat off, set aside, and add Mack Vegan BBQ sauce (Or add your own vegan BBQ sauce.). Coat mushrooms in it completely.
  • Place in oven.
  • Allow to cook for 7-10mins. (Until M.V. BBQ sauce is sticking to mushrooms).


S’Mackin Pork Sandwich

Kitchenware items needed:

You will need a knife, spoon, cutting board, cast-Iron skillet, small pot, strainer, and a spatula.

Ingredients:

4-5 ripe bananas, Mack Vegan BBQ Sauce, pepper, 1 tbsp. Soy Sauce (or coconut amino acids), 3 tsp spoons liquid Smoke, 1 tbsp. Smoke paprika, 3 tsp. Sage, 2 tsp. garlic powder, 1 tbsp. nutritional yeast, olive oil, and water.

Instructions:

  • Preheat oven for 400 degrees.
  • Cut the ends of the bananas off and save the peels. Save bananas for a smoothie or place in freezer to make ice-cream for later. (Save ends for compost.).
  • Scrape inner banana peels completely to remove any of the strains.
  • Cut the banana peels into thin slices.
  • Grab small pot, add banana peels into small pot, and cover with water.
  • Allow to boil for 6 mins.
  • Drain banana peels in strainer and dry banana peels.
  • Turn heat to medium high and cover cast iron skillet evenly with olive oil.
  • Once you see a little smoke add banana peels. Turn heat to medium.
  • Immediately add pepper, garlic powder, soy sauce, (or Coconut Amino Acids.), liquid smoke, smoke paprika, sage and nutritional yeast on banana peels. Mix well.
  • Cut heat to low. Add Mack Vegan BBQ Sauce and mix well (Or add your choice of vegan BBQ sauce.).
  • Allow to cook for 7-10mins. (Until M.V. BBQ sauce is sticking to banana peels.).
  • Take out of oven and set aside.
  • Add the vegan pork on this on a bun of your choice.
